Triticum dicoccum, also known as emmer wheat, is an ancient hulled wheat species. It was one of the first crops domesticated in the Fertile Crescent and is valued for its nutritional content, including protein and fiber. It has a nutty flavor and is used in bread, pasta, and other traditional dishes. Emmer wheat is more resilient than modern wheat varieties, tolerating poor soil and drought conditions. It remains popular in organic and heritage farming.
